Welcome to Quinta Brava.
Join us for an exciting day of cooking and learn about traditional Oaxacan cuisine at our kitchen and small organic farm in Oaxaca City, Mexico. This culinary workshop is 100% hands-on. Meaning you will be involved in every step of the process; selecting the menu for the day, picking fresh ingredients from the farm, visiting the local market, and preparing the feast. Don’t worry, you’ll get to eat the delicious food we make too!
Our goal is to show our guests the magic of Oaxacan food and ensure that they return home knowing how to cook the traditional dishes from the class and more. Throughout the day, we’ll share many family recipes with you, and you’ll have the chance to experiment with a variety of special ingredients and techniques from the region.
We can customize our menu depending on your interests and are also happy to accommodate any dietary restrictions.









Your Oaxacan cooking experience includes…
Transportation to and from your hotel
We start the day by picking you up from wherever you are staying in Oaxaca City and bringing you to Quinta Brava, our small organic farm and natural oasis 15 mins outside of Oaxaca City’s center. Don’t worry how much mezcal you drink, we’ll also take you back at the end of the day!
Coffee and farm tour
Sip on our locally grown coffee from the Oaxacan highlands as we all introduce ourselves and select the menu for the day. After, we’ll show you around the farm, picking fresh vegetables and herbs from our beautiful gardens.
Trip to market
Get to know the neighborhood of Xoxocotlán as we take a short (5 min) walk to the local market to collect the remaining fresh ingredients for our cooking class and Oaxacan feast.
Traditional tortilla making and brunch
You’ve probably tried tortillas before, but have you ever used a metate, authentic wood press, and fresh farm-grown corn (nixtamal) to make your own? We’ll show you how as we prepare a brunch of quesadillas, memelas, empanadas with quesillo, squash blossoms, mushrooms, homemade salsas and much more.
Homemade chocolate and mezcal tasting
We make our in-house chocolate from cocoa beans freshly roasted in the authentic Oaxacan style. You will have the chance to try artisanal mezcal, produced by local families in the age-old tradition, as you relax in the shade of the trees in our backyard. All of our products are also available to take home in our gourmet store.
Three-course meal of your choosing
We’ll spend the rest of the afternoon in our traditional kitchen preparing a plentiful three-course meal including a soup, entrée, main and dessert of your choosing. Some options include mole amarillo (yellow mole), costillas en salsa verde (fried pork ribs in tomatillo sauce), mole encacahuatado (peanut mole) and more. Feel free to choose your own mole adventure!
