Meet Chef Miguel Alvarez

Hello everyone!

I’m Miguel Alvarez. I’m a chill and nice person with a passion for cooking and living. I like to travel around, and after traveling a lot, I decided to go back home and continue learning about my heritage and about proper ancient Oaxaca cuisine, like in my grandmother’s cooking. I traveled all around the state of Oaxaca to learn about techniques, flavors, and procedures to try to go back to the roots of and recover Oaxacan ancient cuisine, cooked like in the villages in generations before.

In 2016, I created a concept called "Eating like in the village". The idea was to show and share all the knowledge about local ancient Oaxacan cuisine cooked in an old-fashioned way in wooden stoves, exactly like in the villages, the restaurant was a success, so, in 2017 I decided to create “The Real Oaxacan Cooking Experience”. The main idea of this project is to show you in a complete 100% hands-on workshop the magic of Oaxacan ancient food… I think it’s a nice way to expand the mind, the library of flavors, and generate more knowledge.

I like to learn from different cultures, dishes, places, people. I enjoy discovering new combinations of flavors. I’m in love with traditional Oaxacan cooking and its magic. In my spare time, I enjoy outdoor sports. I’m a professional competitive swimmer who also enjoys mountain bike riding, surfing, climbing and also chatting with new people about different types of food and parts of the world for example.

Basically, I’m a really easy-going, open-minded person. We can enjoy a nice mezcal, coffee, mate or beer anytime.
